Castle Creek Pumpkin Bread

It’s official! Fall has arrived! As everyone knows, this is the time for all things pumpkin! What better way to share this changing of the season with you, then to let you all in on a little secret…the recipe for our homemade pumpkin bread! Yum! As some of you know, pretty much everything we make here at the Castle is from scratch. This bread is no different. We take the time to bake it to perfection. The smell of our pumpkin bread baking has drawn guest’s right out of their rooms and to the kitchen door. More than once I have served still warm slices of it right out of the pan! Compliment the sweet and spicy pairing with a cup of hot cocoa or apple cider. Then sit back, relax, and usher in the season of the harvest. Better yet, come usher it in with us, here at the Castle!

Castle Creek Inn Pumpkin Bread

1 1/2 Cup Pumpkin

3/4 Cup Vegetable Oil

2  Cups Sugar

3 Eggs

2 1/3 Cup Flour

3/4 Tsp Baking Powder

3/4 Tsp Baking Soda

3/4 Tsp Salt

1 Tsp Cinnamon

1 Tsp Nutmeg

1 Tsp Cloves

Mix pumpkin, oil, sugar, and eggs. Combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Stir flour mixture into pumpkin mixture until well blended. Pour into 2 loaf pans. Bake at 350 for 45 minutes to 1 hour, depending on the oven.
